Balsamic Red Potoates
Roasted balsamic potato recipe

  • 3lbs small Red Potatoesquartered into 1 inch pieces
  • 1 large onionpeeled and diced large
  • 1/4cup olive oil
  • 1 1/2+cups balsamic vinegar
  • salt and pepper
  • freshminced or dried garlic
  1. Preheat the oven to 400 degrees F.
  2. In a large bowl with potatoes and onions add olive oil and toss.
  3. Next add balsamic vinegar and toss.
  4. Pour potatoes in a single layer on a roasting pan.
  5. Lightly salt, pepper and garlic as needed.
  6. Place the pan on the top shelf, cook for around 50 minutes, until the potatoes and onions are dark, sticky and crispy.
  7. About halfway through cooking, remove the pan and toss the onions and potatoes.
  8. Add more balsamic if needed if potatoes seem too light in color.
