Low Carb Pancakes
A low carb version of pancakes made from Almond Meal/Flour.

  • 1cup almond mealalmond flour
  • 2 eggs
  • 1/4cup water
  • 2T oil
  • 1/4teaspoon salt
  • 1T sweetenerI use Stevia
  1. Mix ingredients together and set aside for 15 min for fluffy pancakes.
  2. Turn your griddle on medium heat and lightly spray with oil.
  3. Pour four pancakes out.
  4. Add Blueberries here, Optional.
  5. Flip them over when lightly brown.
  6. Serve when both sides are lightly brown.
  7. Top with Sugar Free syrup or fruit.
Recipe Notes

The original recipe says the pancakes do not bubble like regular pancakes. Mine rose and bubbled just fine. What I did find is that the pancakes will be thicker and heavier than your average pancake.
