Need an easy mid week meal you can throw together in a half hour? This is it! Rotisserie Chicken and Noodles Recipe. Just stop by the grocer on your way home grab a rotisserie chicken, fresh mushrooms and a bag of egg noodles and you have an super easy meal that looks like it took hours to make! This is my go to recipe when I am tired of all the same old same dinners and need something hearty and quick.

Rotisserie Chicken and Noodles Recipe
Prep Time 10 minutes
Cook Time 25 minutes
Servings
Ingredients
  • 2 Rotisserie Chicken Breasts pulled, chopped/sliced, or 1 whole chicken pulled
  • 4 cups uncooked wide egg noodles {I use No Yolks}
  • 1 Tbsp Vegetable Oil
  • 1/2 cup chopped onion
  • 1 8 oz package sliced mushrooms
  • 4 thyme sprigs or dried thyme
  • 3 tbsp white cooking wine
  • 2 can of Cream of Mushroom Soup
  • 1 can chicken Broth

Cook Time 25 minutes

  • 2 Rotisserie Chicken Breasts pulled, chopped/sliced, or 1 whole chicken pulled

  • 4 thyme sprigs or dried thyme
  • 3 tbsp white cooking wine
  • 2 can of Cream of Mushroom Soup
  • 1 can chicken Broth
Rotisserie Chicken and Noodles Recipe
Instructions
  1. Cook noodles according to the package.
  2. Set aside and keep noodles warm.
  3. Heat oil in a deep fryer over med Heat; add onion, mushrooms and thyme.
  4. Cook mixture, stirring constantly for 8 minutes or until onions are translucent.
  5. Add cooking wine, and cook for 4 min.
  6. Stir in soup, broth, and sliced chicken.
  7. Cook stirring occasionally, until heated through.
  8. Remove sprigs of thyme, if used.
  9. Serve over noodles.
Recipe Notes

My grocer has large rotisserie chicken breasts, if your store does not sell them that way then get 1 or 2 rotisserie chickens. Purchase the amount of chicken you usually use to serve your family.
