Combine mayonnaise, honey, Thai Sweet Chili sauce, Sriracha sauce and set aside.
To Fry the Shrimp:
Mix the egg and buttermilk together with a whisk.
Soak shrimp in the egg/buttermilk mixture for 20 min.
Combine flour, corn starch, garlic powder, salt and pepper in a dredging plate or low casserole dish.
Dredge shrimp in flour mixture and drop in hot oil, fry for 3 to 5 minutes.
Place the shrimp on layers of paper towels to drain.
Place a pile of shrimp in a bowl and drizzle it with the sauce or place a few spoonfuls of sauce in large bowl and gently toss with shrimp until coated.
Top with onions and serve alone or with rice.
Notes
Make the shrimp in a frying pan with oil, or an electric fryer.
