Preheat oven to 350°F. Grease a 13×9 casserole dish.
Making the Gravy from Scratch:
Cook sausage in a large skillet over medium heat 5-6 minutes or until thoroughly heated, stirring frequently.
Remove sausage and place it on a plate covered with a few paper towels to drain the grease, leaving 1/8 to 1/4 quarter of the sausage in the skillet with the grease.
Do not pour out the grease you need it to make the gravy.
Slowly stir in the flour.
Gradually add milk; cook until mixture comes to a boil and thickens, stirring constantly.
Reduce heat to medium-low; simmer 2 minutes, stirring constantly. Season to taste with salt and pepper.
Set aside.
Arrange the Casserole:
Cut biscuit dough into 1″ pieces, and line the bottom of the casserole dish.
Layer cooked sausage over the biscuit pieces.
Layer shredded cheese over sausage.
Whisk eggs and milk, add salt and pepper and pour it over the casserole layers.
Pour the gravy over the top of all of the casserole layers.
Bake for 35-45 minutes, or until eggs and biscuits are cooked through & enjoy!
Notes
If you like you can add extra cheese on the top.When making this casserole ahead the night before, increase the cooking time by about 20 minutes. Watch it to make sure the biscuits cook all the way through and the eggs set. If it starts to get too brown on the top cover it with foil.Use 1 (2 3/4 ounce) package Pioneer peppered gravy mix and prepare as stated in the directions on the package if you are not making the homemade version above.
