Set up the cups on a tray, then set aside for later.
In a large mixing bowl add 1 cup of boiling water and the gelatin powder.
Whisk gelatin and water together until jello mixture is completely dissolved.
Next add 1 cup of vodka (or cold water if making a non-alcoholic version). Whisk mixture until combined.
Pour some of the decrative sugar onto a shallow dish.
Dip the rims of the plastic cups in the gelatin mixture and then in the decorating sugars to coat the rims.
Allow the sugar to set/harden for about 20 minutes.
Spoon or ladle the gelatin mix into the cups.
Place the cups on a tray and refrigerate them until they are partially set. Test them in 30 mins- 1 hour.
Place the eyes down into the gelatin. Use a drinking straw or skewers to push them down inside the gelatin.
Place some eyes on the top of the gelatin.
Let the shots completely set for at least 3 hours or for best results let them set overnight. Enjoy!
Notes
To make a non-acoholic version omit the vodka and replace it with cold water. You can also skip the sugar on the rim to reduce some of the sugar content.
