Whether you’re hosting a family gathering or just want to indulge your sweet tooth, these cupcakes are the perfect way to have a little bit of St Patty’s festive fun. This recipe isn’t complicated. All you need is vanilla cake mix, some green icing and sprinkles to make these fun bakery-style treats.

You can use your own frosting recipe or the store-bought kind for these St Patricks Day cupcakes. If you are not great at adding pretty details to the icing, try using the spray can icing that comes with icing tips.

INGREDIENTS  
  • 1 box Vanilla cake mix, any brand is fine

INGREDIENTS FOR CAKE MIX
  • eggs
  • water
  • cooking oil
TOPPINGS
INSTRUCTIONS 
  • Mix the cake mix according to the box.
  • Add cupcake liners to a cupcake/muffin pan. Spray each liner with a light shot of spray cooking oil. (This keeps the cupcakes from sticking to the liners).
  • Pour equal amounts of batter into each cupcake liner (see box directions) and bake as directed on the cake mix box.
  • Cool the cupcakes for 20 minutes or when cool to touch before frosting them.

  • Spread a thin layer of green frosting on the cupcakes.

  • Add the sprinkles to a small bowl and dip each cupcake into the sprinkles to coat the frosting.
  • Pipe frosting in circles to make rosettes over the sprinkles using a piping bag filled with frosting and a #22 star tip.
NOTES

You can use can frosting or your own frosting recipe to ice these cupcakes. If you are using a pastry bag filled with frosting, use a #22 open star frosting tip to get the pattern for the circles on the cupcakes.

To make your own green icing use a drop or two of green gel food coloring in white icing. Add more drops as needed to get the right shade of green.

You can also use the green spray can type icing for these cupcakes too. The cans do not hold a lot of icing so to have enough icing you may need up to 4 cans to get the same results. 1 can will almost make 1 dozen. I am guessing about 3-4 cans will work for these.
