Balsamic Chickpea Jardiniere Salad Vinaigrette

I love Wholefoods, especially their deli section with all those cool yummy salads. Every time we go I want to try a little of this and a little of that. Well they had a Chickpea Jardiniere Salad and the ingredients look so simple I figured I would try to make my own.

Searching around I came across this great Summer Chickpea Salad Recipe on Yummly and tried it out. {Link to recipe below}. Well, it was good at first, it has a lot of ingredients and a tasty vinaigrette, but after it sat it awhile became kind of bland.

The chickpeas soaked up all the flavor. So to change it up, I added some Balsamic vinegar and red onions and boy does it zing now and it’s even better the next day!  This is a yummy and fun recipe, I hope you ‘ll try it, it’s one of my new favs!

The recipe is spot on for the Publix version of Jardiniere Salad as well!

Chickpea Jardiniere Salad with Balsamic Honey Lime Vinaigrette Dressing.

  • 3 15 oz cans of chickpeas, drained and rinsed
  • 1 can white or regular corn, drained
  • 1/2 pint grape tomatoes, sliced
  • 1/4 cup red onion, chopped
  • 3 tablespoons chopped fresh basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 1 1/2 tablespoons honey
  • 3 garlic cloves, minced or pressed
  • 1 lime, juiced

  1. In a large bowl, combine the chickpeas, onions, corn, tomatoes, basil, salt and pepper.
  2. In a small bowl add the oil, balsamic vinegar, honey, garlic and lime juice. Whisk oil mixture together and pour over veggies, toss well to coat.
  3. Pour mixture into an airtight plastic container.
  4. Refrigerate for at the very least 30 minutes before serving, tossing and turning the container every 10 minutes to blend. The longer it sits the better it tastes.

I add my balsamic vinegar and red onions to taste. The more the better. I make this dish a couple hours before serving to allow the vinaigrette to really soak into the veggies. Serve as a side dish or add grilled chicken for a quick lunch!

  1. I looked up this recipe because I bought a pre-made one at the Publix Deli which was absolutely amazing. The taste for this recipe was spot on, but my chickpeas weren’t soft like the Publix one. How could I get the chickpeas to soften?

    1. Hi Danny,
Maybe since a lot of Publix’s salads are premade, it may have sat for awhile in the vinegar and made the chickpeas soften. Perhaps try another brand of canned chickpeas and see if it makes a difference. Glad you liked the recipe! It’s one of my favorites!
