I have been struggling with my weight, It goes up and down, year in year out. The older I get the harder the fight seems to be, so I decided to make a change. I have taken out most of the Carbs and pretty much all sugar in my diet.
The diet I am following is part of the Atkins diet part, diet for a diabetic. I am not diabetic, at least not yet anyway, I just have stubborn belly fat I can’t get rid of. From what I have researched one of the easiest ways to get rid of that stubborn middle fat is to get off sugar and the bad carbs and up your exercise.
Basically, I am addicted to Carbs and sugar and I need to reset my brain to think like a normal person instead of a Carb addict. Starting this diet has been life-changing for me. I am now super aware of the food I eat and how it will affect me.
The downfall of being on that limited of a diet can make meals very boring and repetitious. So I have been searching around for some great recipes that I can keep in my life from here on out. Check out my Low Carb | Paleo Pinterest board for more recipes. This Oven Roasted Cauliflower Steaks recipe is one of my new favs! When I first made it, the taste reminded me of french fries. Crunchy on the outside and soft on the inside. I ate the whole head, I guess I really miss french fries, lol. There are many different seasonings you can add to cauliflower to bring out the taste.
My favorite way to eat this is with garlic and a little Parmesan cheese sprinkled on top! Below is the basic recipe, you can add whatever ingredients you like to make it great! Let me know if you do something different! I’d love to give it a try!

Oven Roasted Cauliflower Steaks
Roasted Sliced Cauliflower with garlic.
Ingredients
- 1 large head of Cauliflower
- olive oil
- Salt & Pepper
- tsp Garlic seasoning or 1/fresh minced garlic
Optional
- 1 cup Parmesan cheese
Instructions
- Preheat oven to 425 degrees.
- Wash and remove leaves from cauliflower. If needed cut the stem off with a sharp knife.
- Slice head side up, stem side down in 3/4 inch slices.
- Lay steaks and florets on a large baking sheet. {If the head crumbles that is fine, just add florets to baking sheet with steaks}.
- Salt and pepper the steaks.
- Sprinkle with garlic seasoning mix or minced garlic.
- Lightly drizzle with olive oil.
- Flip the steaks and florets over with a spatula to coat with olive oil and blend seasonings.
- Bake for 20 minutes.
- Gently turn over steaks and florets with a spatula and roast 15-20 more minutes.
Notes
Add cheese in the last 10-15 minutes of the roast.

Well, so surprised by this cabbage steak recipe. Why? After 55 years of boiling the cabbage and having my entire house still smell bad two days after, I baked the cabbage in the oven, topped with fresh mozzzarella slices during last three minutes on the timer. I was just diagnosed with diabetes and my liver enzymes were up. I’ve never been a soda drinker or drink alcohol. On top of this, I now have to go see a Rheumatologist for an autoimmune deficiency disease. It is better to get a handle on this now rather than getting diagnosed like me. I made this for the first time a couple of weeks ago! Only I used the whole head. Drizzled oil, added garlic ,black pepper,crushed rosemary and thyme. Now I want to make these cauliflower steaks! Hugs

LOVE this idea! I’m still struggling to jump on the cauliflower train, but I might actually give this a shot. I try to limit my bad carbs too……..but my husband can eat them like candy, so it’s a sore spot for us, haha.
