Slow Cooker Southwest Chicken Recipe Made in a Day

This fantastic recipe is a weekly family favorite around my house. The slow cooker makes the chicken is so tender and full of flavor, you won’t be able to eat just one! My husband brought home these cool Old el Paso Stand & Stuff Bowls to try and wow were they a hit! We now have a new fun way to eat on #TacoTuesday!

Super easy recipe to make in a Slow Cooker

Prep Time 10 minutes
Cook Time 4 hours
Total Time 4 hours 10 minutes


  • 1 cans of black beans, drained and rinsed
  • 2 cans of corn, drained
  • 1 package of taco seasoning, {I use McCormick Taco Seasoning Mix}
  • 4-5 skinless chicken breast
  • 1 bottle of salsa, {I use Pace Mild Salsa}
  • 3/4 cup water
  • Optional: Old El Paso Stand & Stuff Soft Taco Bowls
  • Cabbage Slaw Veggie mix
  • Fresh cilantro


  1. Place beans, corn, salsa, taco mix, water and chicken in your slow cooker covering the chicken breasts.
  2. Cook on Low for 3-4 hours.
  3. Shred the chicken with a fork.
  4. Scoop mixture into bowls and sprinkle with cabbage mix and fresh cilantro and serve!


This dish is great over nachos, in tacos or burritos.
