Slow Cooker Salsa Chicken Recipe

This fantastic recipe is a weekly family favorite around my house. The slow cooker makes the chicken so tender and full of flavor, you won’t be able to eat just one!
The chicken is cooked in the salsa until it’s falling apart, then shredded and served in tacos or burritos and nachos. It’s a quick, easy, and healthy meal that the whole family will love.
This simple slow roasted chicken is the perfect dish for busy weeknights or lazy weekends. We use it to make tacos or amazing nachos. With only a few items, its hard to believe how great these basic ingredients can make the chicken taste so great!
Slow Cooker Salsa Chicken Recipe
The original post was the Slow Cooker version. The updated post (2022) shows it is cooked in a Dutch oven at 350°F for 30 minutes or at 300°F for 40 minutes to an hour. Both ways, this recipe comes out great!
Ingredients:
- 1 can of black beans, drained and rinsed
- 1 can of corn drained
- 1 package of taco seasoning
- 4-5 skinless chicken breasts
- 1 bottle of salsa {I use Pace Mild Chunky Salsa}
- 1/2 cup water
- Fresh cilantro
Instructions:
- Add the chicken breasts to the bottom of the slow cooker or Dutch oven.

- Pour the beans, corn, salsa, taco mix, and water covering the chicken breasts.
- Cover and cook on Low for 3-4 hours in a slow cooker, or 3-4 hours in a Dutch oven at 200°F.

- Shred the chicken with two forks to make pulled chicken.

- Scoop mixture into bowls and sprinkle with cabbage mix and fresh cilantro and serve!

Slow Cooker Salsa Chicken
Ingredients
- 1 can of black beans
- 1 can of white corn
- 1 pkg of taco seasoning, {I use McCormick Taco Seasoning Mix}
- 3-4 skinless chicken breasts
- 1 16 oz bottle of salsa, {I use Chunky Pace Mild Salsa}
- ½ cup water
- Fresh cilantro, chopped
Instructions
- Place beans, corn, salsa, taco mix, water and chicken in your slow cooker covering the chicken breasts.
- Cook on Low for 3-4 hours.
- Shred the chicken with a fork.
- Scoop mixture into bowls and sprinkle with cabbage mix and fresh cilantro and serve!
