This is my go-to recipe when I am tired of all the same old same dinners and need something hearty and quick.

Just stop by the grocer on your way home grab a rotisserie chicken, fresh mushrooms, and a bag of egg noodles and you have a super easy chicken stroganoff meal that looks like it took hours to make!

Rotisserie Chicken and Noodles Recipe

Rotisserie chicken stroganoff is classic comfort food that can be whipped up in just a few minutes. This dish is perfect for those cold winter nights when you simply want something to warm you up.

The rotisserie chicken is tender and juicy, and the creamy sauce is perfect for topping off any meal.

MAKE AHEAD: Place them in an airtight container and keep it in the refrigerator for 4-5 days. 
FREEZER: Place in an airtight container or freezer bag. Freeze for up to 3 months.

Rotisserie Chicken and Noodles Recipe

Store bought Rotisserie Chicken with simple semi-homemade mushroom gravy over egg noodles.

Cook Time: 25 minutes

Ingredients

  • 2 Rotisserie Chicken Breasts, pulled, chopped/sliced, or 1 whole chicken pulled
  • 4 cups uncooked wide egg noodles {I use No Yolks}
  • 1 Tbsp Vegetable Oil
  • ½ cup chopped onion
  • 1 8 oz package sliced mushrooms
  • 4 thyme sprigs or dried thyme
  • 3 tbsp white cooking wine
  • 2 can of Cream of Mushroom Soup
  • 1 can chicken Broth

Instructions

  • Cook noodles according to the package.
  • Set aside and keep noodles warm.
  • Heat oil in a deep fryer over med Heat; add onion, mushrooms and thyme.
  • Cook mixture, stirring constantly for 8 minutes or until onions are translucent.
  • Add cooking wine, and cook for 4 min.
  • Stir in soup, broth, and sliced chicken.
  • Cook stirring occasionally, until heated through.
  • Remove sprigs of thyme, if used.
  • Serve over noodles.

NOTES

My grocer has large rotisserie chicken breasts, if your store does not sell them that way then get 1 or 2 rotisserie chickens. Purchase the amount of chicken you usually use to serve your family.
