Garden Plant Cupcakes for Earth Day

These cupcakes are a delicious way to celebrate Earth Day and Arbor Day. They’d make for great party favors at your next kid’s school, or even better; why don’t you bring them in as an educational project? You could show the kids how they can do their part by giving back what we’ve polluted from nature!
They’re so easy to make, anyone can do it. All you need is a few simple ingredients and some creativity! I just love the real mint sprigs. They look like real plants growing out of the soil! How fun!
What other earth day cupcake toppers can I use?
- Basil or other edible herbs
- Fondant made into leaves
- Edible small flowers
- Crush Oreo cookies in a food processor as the dirt topping -Oreo dirt cupcakes
Can I make these into Flower Pot Cupcakes?
Yes! Since these plant cupcakes have liners you can easily insert them into 2 x 2 terracotta pots! Add some edible flowers and they are perfect for spring parties.
You can also bake them right into the pots!
Just wash and dry the pots thoroughly and spray the inside with cooking spray. Add a cupcake liner or parchment paper to the inside bottom of the pot to seal the hole. Fill them with batter 1/2- 3/4’s of the way up and bake at 350˚ F. Let them cool frost, sprinkle with cake crumbs and add your mint sprig!
How to make a batch of Garden Plant Cupcakes
Ingredients:
- 1 box of chocolate cake mix or your favorite cake recipe
- Eggs, oil & water for cake mix
- Chocolate frosting in the can or your favorite recipe
- Frosting piping bag with a frosting tip
- Fresh mint leaves on stems

Instructions:
- Mix up the cake mix using a blender in a large mixing bowl according to the directions on the box.
- Bake cupcakes in a muffin pan in the oven per recipe or box directions for cupcakes and cool on a wire rack completely.

3. Top each cupcake with piped frosting.

4. Crumble up a few of the chocolate cupcakes to sprinkle on for the “soil”.
5. Sprinkle or spoon the crumbs over the frosting to create a “soil look”.

6. Place a mint leaf stem in the center top of each cupcake to represent a seedling
